Hen in Pepper Sauce (Gallina en Pebre)

Ingredients
- 1 whole hen
- manteca (lard)
- salt
- garlic
- lemon juice
- parsley
- black pepper
- bay leaf
- 1 jícara (approx. 1 cup / 240 ml) olive oil
- caldo (broth)
- 1 egg yolk
Instructions
- Clean the hen and place it on a grill or roasting rack. Brush frequently with melted manteca (lard), crushed garlic, salt, and lemon juice. When halfway roasted, transfer the hen to a cazuela (earthenware cooking vessel) along with manteca, parsley, black pepper, salt, bay leaf, the roasting juices, and a jícara of olive oil. Add enough caldo (broth) to finish cooking the hen until it is completely tender.
- The sauce may be thickened with egg yolk, as in pepitoria (a traditional Spanish stewed chicken dish), or served as-is, passing it through a sieve.
