  1. Clean the hen and place it on a grill or roasting rack. Brush frequently with melted manteca (lard), crushed garlic, salt, and lemon juice. When halfway roasted, transfer the hen to a cazuela (earthenware cooking vessel) along with manteca, parsley, black pepper, salt, bay leaf, the roasting juices, and a jícara of olive oil. Add enough caldo (broth) to finish cooking the hen until it is completely tender.
  2. The sauce may be thickened with egg yolk, as in pepitoria (a traditional Spanish stewed chicken dish), or served as-is, passing it through a sieve.
