Asparagus Andalusian Style

Ingredients
- olive oil
- garlic cloves
- bread crust
- asparagus tips
- pimentón (Spanish paprika)
- water
- salt
- black pepper
- cumin seeds
- caldo (asparagus cooking broth)
Instructions
- Heat olive oil in a frying pan and fry the garlic cloves and bread crust together until they are golden. Remove them from the oil and set aside. In the same hot oil, add the asparagus tips with a little pimentón (Spanish paprika) and cook briefly.
- Transfer the asparagus to an earthenware pot (cacerola de barro), cover with water seasoned with salt and pepper, and bring to a gentle simmer.
- Crush the reserved fried bread and garlic together with a few cumin seeds to make a paste. Thin this paste with a little olive oil and some of the asparagus cooking broth, then stir it into the pot with the asparagus. Mix well and continue cooking over low heat.
- Serve in the same earthenware pot.
