Asparagus Andalusian Style

Ingredients
- olive oil
- garlic cloves
- bread crust
- asparagus tips
- pimentón (Spanish paprika)
- water
- salt
- black pepper
- cumin seeds
- caldo (asparagus cooking broth)
Instructions
- Heat olive oil in a frying pan and fry the garlic cloves and bread crust together until they are golden.
- Remove them from the oil and set aside.
- In the same hot oil, add the asparagus tips with a little pimentón (Spanish paprika) and cook briefly.
- Transfer the asparagus to an earthenware pot (cacerola de barro), cover with water seasoned with salt and pepper, and bring to a gentle simmer.
- Crush the reserved fried bread and garlic together with a few cumin seeds to make a paste.
- Thin this paste with a little olive oil and some of the asparagus cooking broth, then stir it into the pot with the asparagus.
- Mix well and continue cooking over low heat.
- Serve in the same earthenware pot.
