Chocolate Soufflé

  1. Heat the milk and dissolve the chocolate in it. Add the potato starch and bring to a boil for three minutes. Remove from the heat and allow to cool completely.
  2. Once the mixture has cooled enough that it will not cook the eggs, beat the egg yolks well and stir them into the chocolate mixture.
  3. In a separate bowl, beat the egg whites to stiff peaks (a point de nieve). Gently fold the whites into the chocolate mixture.
  4. Prepare a mold by heating it and coating it thoroughly with butter. Pour the soufflé batter into the mold.
  5. Place over heat, cover with a kitchen bell (horno de campaña), and bake until puffed and set. Serve in the mold as soon as it comes from the heat.
