Eel in Sauce

  1. To prepare the eel properly, wrap it in paper lightly oiled or spread with pork lard (manteca de cerdo), then grill it. Once cooked, divide it along the backbone when serving.
  2. For best results, stuff the eel with a paste made of beef lard (manteca de vaca), fresh herbs, and breadcrumbs. Alternatively, you can make a white sauce (salsa blanca) to serve separately in a sauce boat, with the eel presented on another plate.
  3. Lemon juice is almost indispensable for this dish.
