Eel in Sauce

Ingredients
- 1 eel
- oil or pork lard (manteca de cerdo)
- beef lard (manteca de vaca)
- fresh herbs (hierbas finas)
- breadcrumbs
- béchamel sauce (salsa blanca)
- lemon juice
Instructions
- To prepare the eel properly, wrap it in paper lightly oiled or spread with pork lard (manteca de cerdo), then grill it. Once cooked, divide it along the backbone when serving.
- For best results, stuff the eel with a paste made of beef lard (manteca de vaca), fresh herbs, and breadcrumbs. Alternatively, you can make a white sauce (salsa blanca) to serve separately in a sauce boat, with the eel presented on another plate.
- Lemon juice is almost indispensable for this dish.
