  1. Chop very fine the chatchigorris left from rendering nine *libras* (an old Spanish pound) of lard, and work them together with half a kilo of bread dough, five spoonfuls of lard, two eggs, ten soup-spoonfuls of sugar and ten céntimos' worth of ground cinnamon. Mix and knead everything in a slightly warmed casserole so the fat softens, then add flour until the dough can be handled on the table without sticking to your hands. Shape the tortas, set them on papers greased with lard, dust the tops lightly with sugar and cinnamon, and put them in the oven.
