Meat with Artichokes

Ingredients
- beef, sliced thin
- manteca (lard)
- garlic, minced
- onion, minced
- parsley, minced
- flour
- caldo (broth) or water
- artichoke hearts, small
- white wine
Instructions
- Heat the manteca (lard) in a pot and sear the thin beef slices.
- Add the minced garlic, onion, and parsley, and let them sauté gently until softened.
- Dust the mixture with flour and toast it briefly, stirring well.
- Add caldo (broth) or water gradually until the beef is just covered.
- Simmer until the meat becomes tender.
- Separately, boil the artichoke hearts until just tender.
- Coat them lightly with flour and fry them in a separate pan until golden.
- Add the fried artichoke hearts to the meat in the pot.
- Pour in the white wine and continue cooking until the sauce reduces and thickens, taking care not to break apart the delicate artichokes.
