Meat with Artichokes

Instructions

  1. Heat the manteca (lard) in a pot and sear the thin beef slices. Add the minced garlic, onion, and parsley, and let them sauté gently until softened.
  2. Dust the mixture with flour and toast it briefly, stirring well.
  3. Add caldo (broth) or water gradually until the beef is just covered. Simmer until the meat becomes tender.
  4. Separately, boil the artichoke hearts until just tender. Coat them lightly with flour and fry them in a separate pan until golden.
  5. Add the fried artichoke hearts to the meat in the pot. Pour in the white wine and continue cooking until the sauce reduces and thickens, taking care not to break apart the delicate artichokes.
