Instructions

  1. Bring salted water to a boil and cook the cleaned spinach in it. After cooking, chop the spinach finely and transfer it to cold water, then squeeze it well to remove excess moisture. Once dry, pass the spinach through a fine sieve (tamiz). Cook the sieved spinach with milk and manteca (lard) over gentle heat until the purée reaches the proper consistency.
