Egg Yolk Candies with White Glaze

Ingredients
- a little water
- 0.5 kg sugar
- 12 egg yolks
- as needed fine sugar for coating
- as needed white glaze (bechamel-based or egg white glaze)
Instructions
- Prepare a thick syrup (almíbar espeso) by cooking water and sugar together. When the syrup has cooled to roughly lukewarm, add the egg yolks directly to the pan, stirring gently and continuously so they set without sticking to the bottom. Once the yolk mixture is cooked through, turn it out onto a work surface and coat entirely in fine sugar. Leave for one day. The next day, portion the mixture into individual candies shaped like egg yolks. Dip each candy into the white glaze. Once cold and set, wrap each in paper.
