Colossal Egg

Ingredients
- Eggs
- 2 Bladders (vejigas), inflated and dried
- Piquant sauce (salsa picante)
- Parsley
- Lettuce hearts (cogollos de lechuga)
- Vinegar
- Oil
- Spices (especias)
Instructions
- Take two inflated, dried bladders, one smaller than the other.
- Separate eggs; fill the smaller bladder with yolks, close it round, and cook in boiling water until the yolk is hard.
- Break the bladder, extract the shaped yolk, and place it inside the larger bladder previously filled with whites so the yolk sits centered.
- Close the larger bladder round and cook in boiling water until the white is firm.
- Break the bladder to release the colossal egg; serve on a piquant sauce garnished with parsley and dressed lettuce hearts.
