Veal with Olives

Instructions

  1. Mix a good piece of veal with jamón (cured ham). Season with salt and lemon juice. Brown the meat in manteca (lard). Add a little toasted flour, a ladle of caldo (broth), and a glass of white wine.
  2. When the meat is nearly cooked, add pitted olives. Let simmer for about fifteen minutes and serve.
