Veal with Olives

Ingredients

Instructions

  1. Mix a good piece of veal with jamón (cured ham).
  2. Season with salt and lemon juice.
  3. Brown the meat in manteca (lard).
  4. Add a little toasted flour, a ladle of caldo (broth), and a glass of white wine.
  5. When the meat is nearly cooked, add pitted olives.
  6. Let simmer for about fifteen minutes and serve.
