Veal with Olives

Ingredients
- 1 piece good veal
- 1 piece jamón (cured ham)
- salt
- lemon juice
- manteca (lard)
- a little toasted flour
- 1 small ladle caldo (broth)
- 1 glass white wine
- pitted olives
Instructions
- Mix a good piece of veal with jamón (cured ham). Season with salt and lemon juice. Brown the meat in manteca (lard). Add a little toasted flour, a ladle of caldo (broth), and a glass of white wine.
- When the meat is nearly cooked, add pitted olives. Let simmer for about fifteen minutes and serve.
