Fiambres (Cold Sandwich Canapés)

  1. Spread butter on one side only of thin bread slices. Top each buttered side with small pieces of jamón (cured ham) or lengua a la escarlata (scarlet-prepared tongue). Cover with another slice of bread. Place weights on top for several hours to compress and bind the sandwich.
  2. Remove weights and cut the compressed sandwich into small squares. Arrange on a serving platter lined with a napkin, forming them into a pyramid shape. Garnish the platter with olives and rounds of salchichón (dry sausage).
