Orange Gelatin

Ingredients

Instructions

  1. Combine equal measures of orange juice and sugar in a heavy pot. Add the egg white for clarification. Heat over medium fire until half-cooked, then strain through a fine sieve.
  2. Return the strained liquid to the fire. Dissolve the fish gelatin (colas de pescado) in a little warm water and add to the pot. Allow to boil gently until it reaches setting point (when a drop on a cold plate firms immediately).
  3. Pour into molds and allow to cool and set completely.
