Cauliflower Salad

Ingredients

Instructions

  1. Wash the cauliflower and boil it in plenty of water to cover until it yields to pressure.
  2. Drain and rinse it in water hotter than lukewarm without removing it from the pot, then lift out carefully.
  3. Cut off the lower florets and chop them fine with a head of onion and a bunch of parsley.
  4. Beat oil and vinegar with pepper and salt; toss part with the chopped mixture and spread it in the salad bowl.
  5. Stand the cauliflower in the center and bathe it with the rest of the dressing.
