Apple Pudding

Ingredients
- 2 dozen apples
- sugar
- sponge cake (bizcochos)
- 3 tablespoons bread crumbs
- 4 eggs
- 50 grams mantequilla (butter)
Instructions
- Roast about two dozen apples. Peel and core them, then mash them with a wooden spoon, mixing in sugar to taste. Break up some sponge cake and combine with the apples. Toast and grind bread crumbs, then mix them in along with four beaten eggs.
- Pour the mixture into a saucepan and cook over very low heat, stirring constantly without stopping. Add 50 grams of butter.
- Prepare a pudding mold by coating it with caramelized sugar. Pour the mixture into the mold and cook in a bain-marie (water bath). Finish by browning it in the oven.
