Apple Pudding

Ingredients
- 2 dozen apples
- sugar
- sponge cake (bizcochos)
- 3 tablespoons bread crumbs
- 4 eggs
- 50 grams mantequilla (butter)
Instructions
- Roast about two dozen apples.
- Peel and core them, then mash them with a wooden spoon, mixing in sugar to taste.
- Break up some sponge cake and combine with the apples.
- Toast and grind bread crumbs, then mix them in along with four beaten eggs.
- Pour the mixture into a saucepan and cook over very low heat, stirring constantly without stopping. Add 50 grams of butter.
- Prepare a pudding mold by coating it with caramelized sugar.
- Pour the mixture into the mold and cook in a bain-marie (water bath).
- Finish by browning it in the oven.
