Spicy Cheese Sauce (Salsa Picante de Queso)

Ingredients
- red ají (ají colorado), well ripened
- 1 head onion
- 1 piece fresh cheese (queso fresco)
- 1 tomato, roasted in the embers
- 1 sprig guacatay (huacatay, a Peruvian black-mint herb)
- 1 cooked potato
- salt
- sour orange juice (naranja agria)
Instructions
- Choose well-ripened red ají in the quantity needed.
- Roast them in the embers, remove the seeds, wash them, and leave them to soak for an hour.
- Put them in a mortar with a head of onion, a piece of fresh cheese, a tomato roasted in the embers, a sprig of guacatay, a cooked potato, and salt.
- Grind everything very well.
- Once in the sauce boat, finish seasoning it with sour orange juice.
