Egg Plant Stuffed

Ingredients

Instructions

  1. Remove the inside of the egg plant.
  2. Boil the removed inside in just enough water to cover it for ten minutes.
  3. Drain or press the water all out through a colander.
  4. Chop the ham fine.
  5. Combine equal proportions of ham, cracker crumbs, and bread crumbs with one tablespoonful of butter per egg plant.
  6. Season the mixture with salt and black pepper to taste.
  7. Fry the mixture brown.
  8. Stuff the egg plants full with the mixture and close them.
  9. Put them to bake in a hot oven just before serving; they will bake in ten minutes.
