Bean Pie

Ingredients

Instructions

  1. Soak a pound of beans in cold water for ten hours.
  2. Remove the skins, wash the beans, give them a boil, and grind them in the mortar.
  3. Put the mash in a deep dish with a piece of butter and beat in a tablespoon of flour and a cup of milk.
  4. Fry fresh salt pork in small pieces, mix into the mash, and beat again while adding two tablespoons of pure olive oil; season with salt, pepper and a ground garlic clove.
  5. Grease a mold or baking dish with butter, keeping a thick layer of butter in the bottom, and pour in the mash.
  6. Lay a very thin hojaldra over the top and bake until the pastry has browned.
