Partridges American Style

Ingredients
- partridges
- beef lard (manteca de vaca)
- a pinch salt, ground
- 3–4 grains whole black pepper
- oil
- water with salt
- 1/2 cuartillo milk
- 2 egg yolks
- 2 ounces chocolate, grated
Instructions
- Stuff the cleaned partridges with beef lard (manteca), a pinch of ground salt, and three or four whole peppercorns.
- Fry the partridges thoroughly in oil. Add salted water until the liquid covers the partridges, and let them simmer until the water is completely consumed.
- Once golden in the remaining fat, prepare a sauce: whisk together the milk, egg yolks, and finely grated chocolate. Pour this sauce over the partridges.
- Serve the dish hot.
