Partridges American Style

Instructions

  1. Stuff the cleaned partridges with beef lard (manteca), a pinch of ground salt, and three or four whole peppercorns.
  2. Fry the partridges thoroughly in oil. Add salted water until the liquid covers the partridges, and let them simmer until the water is completely consumed.
  3. Once golden in the remaining fat, prepare a sauce: whisk together the milk, egg yolks, and finely grated chocolate. Pour this sauce over the partridges.
  4. Serve the dish hot.
