Chicken in Cognac (Pollos al Coñac)

Ingredients

Instructions

  1. Cook the chickens and reserve the broth.
  2. Work a tablespoon of flour into butter, then add enough broth to make a sauce of the desired thickness.
  3. Joint the chickens and arrange the pieces in a dish.
  4. Stir a good glass of cognac into the sauce and pour it over the pieces.
  5. Cover with grated Gruyere cheese and bake until the cheese browns.
