Chicken in Cognac (Pollos al Coñac)

Ingredients
- chickens
- broth
- 1 tbsp flour
- butter
- 1 glass cognac
- Gruyere cheese
Instructions
- Cook the chickens and reserve the broth.
- Work a tablespoon of flour into butter, then add enough broth to make a sauce of the desired thickness.
- Joint the chickens and arrange the pieces in a dish.
- Stir a good glass of cognac into the sauce and pour it over the pieces.
- Cover with grated Gruyere cheese and bake until the cheese browns.
