Veal with Mushrooms

Ingredients
- 1 tin mushrooms
- good caldo (broth)
- some truffles
- 1 onion
- 1.5–2 pounds veal
- 1 cup white wine
- a pinch nutmeg
- 1–2 tablespoons toasted flour
Instructions
- Drain and rinse the tinned mushrooms thoroughly with two or three changes of water. Cook them in good caldo (broth), then chop them finely and mix with some chopped truffles.
- Fry the onion in a pan. Add the veal cut into pieces and seasoned with salt. Pour in one cup of white wine, a little nutmeg, and the toasted flour. Stir to combine.
- Add the mushroom and truffle mixture to the veal and sauce. Cook everything together briefly before serving.
