Sole on a Plate

  1. Lightly coat a heat-safe plate with lard and scatter minced onions and mushrooms over the bottom. Lay the two cleaned sole fillets on top, opened to lie flat, side by side. Pour the white wine over them and add the broth. Top with additional minced mushrooms, breadcrumbs, and a little melted lard.
  2. Place the plate in the oven at moderate heat for 18 to 20 minutes. Serve the sole in the same plate.
