Mixed Vegetable Pudding

Ingredients
- peas
- asparagus tips
- artichoke hearts
- cauliflower
- beef lard (manteca de vaca)
- jamón (cured ham)
- tocino (salt pork or bacon)
- tomato
- onion
- eggs, beaten
- beef lard (manteca)
- tomato sauce
Instructions
- Cook the peas, asparagus tips, artichoke hearts, and cauliflower until tender, then drain well.
- In a separate pan, heat beef lard (manteca de vaca) and fry the jamón, tocino, tomato, and onion together until softened and browned.
- Combine the fried mixture with the drained vegetables. Fold in the beaten eggs until well incorporated.
- Grease a mold with beef lard and pour the mixture into it. Place the mold in a bain-marie (water bath) and cook until set and firm.
- Turn out onto a serving dish. Serve warm, optionally accompanied by tomato sauce.
