Mixed Vegetable Pudding

Instructions

  1. Cook the peas, asparagus tips, artichoke hearts, and cauliflower, then drain well.
  2. In a separate pan, heat beef lard (manteca de vaca) and fry the jamón, tocino, tomato, and onion together.
  3. Combine the fried mixture with the drained vegetables.
  4. Fold in the beaten eggs until well incorporated.
  5. Grease a mold with beef lard and pour the mixture into it.
  6. Place the mold in a bain-marie (water bath) and cook until set and firm.
  7. Turn out onto a serving dish.
  8. Serve warm, optionally accompanied by tomato sauce.
