  1. Prepare a clear consommé (caldo claro) as the base. Cook lettuce leaves until tender. Fill each leaf with veal paste (tarsa de ternera) and roll tightly into cigar shapes. Poach these rolls moments before serving. Cut brioche into 3-centimeter diameter rounds and fry until golden. Top each crouton with reduced carrot purée (puré crecy), then nap with the remaining purée and gratinéed (browned under heat). Serve the consommé in bowls garnished with the lettuce rolls and prepared brioche croutons.
