Sole à la Française

Ingredients
- 1 whole sole
- fine salt
- small amount English pepper
- a few thin slices of onion
- small amount olive oil
- shallots, chopped
- parsley, chopped
- capers, chopped
- small amount butter
- lemon juice
- as needed caldo (broth)
Instructions
- Clean the sole and season it with fine salt and a small amount of English pepper. Place it in an elongated, slightly deep baking dish.
- Fry thin slices of onion and add them to the fish along with a little olive oil. Scatter the chopped shallots, parsley, and capers over the fish, then add a small amount of butter.
- Bake in the oven for fifteen minutes. When serving, drizzle with lemon juice. If the fish appears dry, add a little caldo (broth) to the pan.
