Sole à la Française

  1. Clean the sole and season it with fine salt and a small amount of English pepper. Place it in an elongated, slightly deep baking dish.
  2. Fry thin slices of onion and add them to the fish along with a little olive oil. Scatter the chopped shallots, parsley, and capers over the fish, then add a small amount of butter.
  3. Bake in the oven for fifteen minutes. When serving, drizzle with lemon juice. If the fish appears dry, add a little caldo (broth) to the pan.
