Origin: Madrid, Spain
Source: Anonymous, 1920
Ingredients
- beef lard (manteca de vaca)
- 1 medium onion
- water
- salt
- bread
- Gruyère cheese
Instructions
- Heat the beef lard in a saucepan over the fire. Add the finely minced onion and cook until it begins to turn golden.
- Pour in the water needed for the soup and season with salt.
- In a separate baking dish, build alternating layers: a layer of thin bread slices, then a layer of Gruyère cheese, then bread again. Continue layering as many times as desired.
- Pour the hot broth from the saucepan over the layered bread and cheese. Place in the oven for a short time until the cheese melts and the flavors unite.
