Cheese Soup

  1. Heat the beef lard in a saucepan over the fire. Add the finely minced onion and cook until it begins to turn golden.
  2. Pour in the water needed for the soup and season with salt.
  3. In a separate baking dish, build alternating layers: a layer of thin bread slices, then a layer of Gruyère cheese, then bread again. Continue layering as many times as desired.
  4. Pour the hot broth from the saucepan over the layered bread and cheese. Place in the oven for a short time until the cheese melts and the flavors unite.
