Quince Gelatin

Ingredients
- 12 ripe quinces (to be cooked)
- 12 raw quinces, with their seeds
- water
- sugar (for the syrup)
Instructions
- Cook twelve ripe quinces in water.
- Extract seeds from twelve raw quinces and soak them with their gum in warm water.
- When the cooked quinces fall apart and water reduces, cool and remove their seeds.
- Make a syrup from the cooking water and strain.
- Rub the soaked seeds to release their gum, strain, and mix into the syrup.
- Cook until it reaches setting point, then serve in glasses.
