Quince Gelatin

Instructions

  1. Cook twelve ripe quinces in water.
  2. Extract seeds from twelve raw quinces and soak them with their gum in warm water.
  3. When the cooked quinces fall apart and water reduces, cool and remove their seeds.
  4. Make a syrup from the cooking water and strain.
  5. Rub the soaked seeds to release their gum, strain, and mix into the syrup.
  6. Cook until it reaches setting point, then serve in glasses.
