Ingredients
- Puff pastry (hojaldre)
- Plum paste
- Pastry cream (crema)
- Chantilly cream
- Meringue
- Jam with candied fruits
Instructions
- Prepare a fine puff pastry (hojaldre) and roll it out. Using a large crystal fruit bowl as a cutter, cut out several equal-sized circles. Place them on baking sheets separately and bake in the oven until golden, then let cool.
- Begin assembling the cake by layering the pastry circles. Start with one layer and fill it with a paste of your choice—plum, cherry, currant, or apricot—whichever you prefer. Add another pastry layer and fill with pastry cream (crema). Continue alternating: a layer with fruit paste, another with Chantilly cream, and so on, building height with successive layers.
- Once the layers are stacked, surround the entire dessert with meringue and cover the top with jam mixed with candied fruits.
