  1. Prepare a fine puff pastry (hojaldre) and roll it out. Using a large crystal fruit bowl as a cutter, cut out several equal-sized circles. Place them on baking sheets separately and bake in the oven until golden, then let cool.
  2. Begin assembling the cake by layering the pastry circles. Start with one layer and fill it with a paste of your choice—plum, cherry, currant, or apricot—whichever you prefer. Add another pastry layer and fill with pastry cream (crema). Continue alternating: a layer with fruit paste, another with Chantilly cream, and so on, building height with successive layers.
  3. Once the layers are stacked, surround the entire dessert with meringue and cover the top with jam mixed with candied fruits.
