Instructions

  1. Shell the fresh peas and cook them in boiling salted water with the onion, leek, parsley, and manteca (lard) until tender. Pass the cooked peas through a food mill or fine sieve to create a smooth purée. Bind the purée with egg yolks, stirring gently to incorporate them without curdling. Transfer the purée to a hot soup tureen and serve poured over small fried pieces of ham and fried bread.
