Seasoned Bread Soup (Sopa Aderezada)

Ingredients
- bread, in thin slices
- tocino (bacon / salt pork), chopped
- ham (jamón), chopped
- poultry giblets, chopped
- hard-boiled eggs, chopped
- grated cheese
- parsley
- whole peppercorns
- butter
- broth
- artichoke hearts (cogollos de alcachofa)
- fried small birds (pajaritos)
Instructions
- Cut the bread into thin slices and toast them carefully on the grill.
- Chop tocino (bacon or salt pork), ham, poultry giblets, and hard-boiled eggs with grated cheese, parsley, and whole peppercorns, and season this over the fire with butter for ten minutes.
- In a casserole, alternate a layer of toasted bread with a layer of the chopped mixture until the casserole is half full.
- Mix the sauce into the broth, pour it over the bread, and bring to a boil on the fire.
- Serve garnished with hard-boiled egg in rounds, artichoke hearts, and fried small birds.
