Seasoned Bread Soup (Sopa Aderezada)

  1. Cut the bread into thin slices and toast them carefully on the grill.
  2. Chop tocino (bacon or salt pork), ham, poultry giblets, and hard-boiled eggs with grated cheese, parsley, and whole peppercorns, and season this over the fire with butter for ten minutes.
  3. In a casserole, alternate a layer of toasted bread with a layer of the chopped mixture until the casserole is half full.
  4. Mix the sauce into the broth, pour it over the bread, and bring to a boil on the fire.
  5. Serve garnished with hard-boiled egg in rounds, artichoke hearts, and fried small birds.
