Partridge Stew (Second Method)

Instructions

  1. Pluck and clean one or two partridges. Brown them in a skillet, then transfer to a pot. Add the fried bacon cut into small cubes, coarsely chopped onion in abundance, crushed garlic, mixed spices of all kinds, lard, and dry white wine.
  2. Place the covered pot over low heat. Set a small clay pot filled with water on top of the pot, using brown paper between them as insulation. Cook until the partridges are very tender, then serve.
