Partridge Stew (Second Method)

Ingredients
- 1–2 whole partridges
- bacon or salt pork (tocino), fried
- abundant onion, coarsely chopped
- garlic, crushed
- mixed spices
- manteca (lard)
- dry white wine
- water
Instructions
- Pluck and clean one or two partridges. Brown them in a skillet, then transfer to a pot. Add the fried bacon cut into small cubes, coarsely chopped onion in abundance, crushed garlic, mixed spices of all kinds, lard, and dry white wine.
- Place the covered pot over low heat. Set a small clay pot filled with water on top of the pot, using brown paper between them as insulation. Cook until the partridges are very tender, then serve.
