Sábalo Mimosa Style

  1. Scale, gut and clean the sábalo and brine it one hour in a glazed earthen pot, turning it so it salts evenly.
  2. In a fire-resistant dish, over a layer of butter and finely chopped fine herbs, lay the fish and dust both sides with pepper and nutmeg.
  3. Cover with a layer of breadcrumbs and moisten with a bottle of white wine.
  4. Add another layer of breadcrumbs and pour melted butter over the fish, keeping it uncovered by the wine.
  5. Bake in the oven, opening it occasionally to watch and to baste the fish with its own juices.
  6. Serve in the roasting dish with cut lemons alongside.
