Clam Soup

Ingredients
- clams
- water
- salt
- olive oil
- garlic
- scallions (cebolleta)
- tomato
- parsley
- rice or bread slices
Instructions
- Wash the clams thoroughly. Cook them in water with salt until tender. Remove the clams from their shells and set aside.
- In a cooking pot, make a sofrito by frying the olive oil with minced garlic, chopped scallions, tomato, and parsley. Add the shelled clams to this base.
- Strain the cooking liquid from the clams and add it to the pot. Finish the soup with rice or thin slices of bread, cooking until the starch is tender.
