Skate à la Casera (Home-Style Skate)

  1. Rinse the skate thoroughly in cold water. Remove and reserve its liver, then cut the fins into pieces.
  2. Place the skate pieces in a pot or large pan with water, vinegar, onion, and a little salt. Bring to a boil and let it give two boils to avoid overcooking it. Remove from heat.
  3. Lift the skate carefully and place it in a serving dish. Peel off the skin.
  4. Return the skinned skate to the stovetop with half a cup of caldo (broth) to warm through.
  5. When ready to serve, drain the skate, arrange it on a platter, place the cooked liver on top, and cover generously with salsa blanca (béchamel sauce).
