Skate à la Casera (Home-Style Skate)

Ingredients
- 1 whole skate (raya)
- to taste water
- to taste vinegar (vinagre)
- 1 small onion (cebolla)
- a pinch salt (sal)
- ½ cup caldo (broth)
- to taste salsa blanca (béchamel sauce)
Instructions
- Rinse the skate thoroughly in cold water. Remove and reserve its liver, then cut the fins into pieces.
- Place the skate pieces in a pot or large pan with water, vinegar, onion, and a little salt. Bring to a boil and let it give two boils to avoid overcooking it. Remove from heat.
- Lift the skate carefully and place it in a serving dish. Peel off the skin.
- Return the skinned skate to the stovetop with half a cup of caldo (broth) to warm through.
- When ready to serve, drain the skate, arrange it on a platter, place the cooked liver on top, and cover generously with salsa blanca (béchamel sauce).
