Stuffed Loin of Pork

Instructions

  1. Open the pork loin and pound it well with a meat mallet to flatten evenly.
  2. Stuff the loin with the chopped olives, strips of tocino (cured pork belly), and jamón (cured ham). Season the filling with pepper and nutmeg.
  3. Tie the loin securely with kitchen twine.
  4. Place in a pot with water and salt. Cook slowly for three hours.
  5. Remove from heat and allow to cool. Serve cold, sliced into rounds.
