Stuffed Loin of Pork

Ingredients
- 1 pork loin
- olives, chopped
- tocino (cured pork belly), cut into strips
- jamón (cured ham), sliced
- a little black pepper
- a little nutmeg
- water
- salt
Instructions
- Open the pork loin and pound it well with a meat mallet to flatten evenly.
- Stuff the loin with the chopped olives, strips of tocino (cured pork belly), and jamón (cured ham). Season the filling with pepper and nutmeg.
- Tie the loin securely with kitchen twine.
- Place in a pot with water and salt. Cook slowly for three hours.
- Remove from heat and allow to cool. Serve cold, sliced into rounds.
