Olive Stew in the Style of Lila (Guisado de Aceitunas á la Lila)

Ingredients
- black olives, the fleshiest
- 3 heads onion, finely chopped
- parsley, finely chopped
- capers (alcaparras), finely chopped
- butter
- 1 tbsp flour
- 3 tbsp good broth
- pepper
- salt
- 1 glass Champagne wine
- pure oil
Instructions
- Choose the fleshiest black olives; soak 30 minutes in warm water, wash, and pit them whole.
- Make a sauce of finely chopped onion, parsley, and capers cooked in butter until the onion begins to brown.
- Stir in a spoonful of flour, then three spoonfuls of broth seasoned with pepper and salt, and pour in a glass of Champagne wine.
- Add the olives, boil five minutes, and finish in the serving dish with a few drops of pure oil.
