Olive Stew in the Style of Lila (Guisado de Aceitunas á la Lila)

  1. Choose the fleshiest black olives; soak 30 minutes in warm water, wash, and pit them whole.
  2. Make a sauce of finely chopped onion, parsley, and capers cooked in butter until the onion begins to brown.
  3. Stir in a spoonful of flour, then three spoonfuls of broth seasoned with pepper and salt, and pour in a glass of Champagne wine.
  4. Add the olives, boil five minutes, and finish in the serving dish with a few drops of pure oil.
