Ingredients

Instructions

  1. Heat half a cuartillo of water with salt, 2 tablespoons of powdered sugar, 75 grams of butter, and lemon zest in a heavy pot.
  2. As soon as it reaches a boil, remove from heat and stir in 125 grams of flour, mixing well until the paste is smooth and without lumps.
  3. Return to low heat and cook, stirring constantly, until the mixture is thick and pulls away from the sides of the pot.
  4. Remove from heat and incorporate the four whole eggs one at a time, beating well after each addition, until fully incorporated. Remove the lemon zest.
  5. Using a spoon, drop portions of the dough onto a baking sheet.
  6. Dust generously with sugar and bake in a moderate oven.
  7. Allow to cool completely.
  8. Before serving, garnish each pastry with whipped cream.
