Buñuelos de Viento (Puffed Fritters)

Ingredients
- 100 g flour
- 50 g pork lard (manteca de cerdo)
- 1 cup water
- salt
- sugar
- 3 eggs
- lemon zest
- oil for deep frying
Instructions
- Combine the flour, pork lard, water, salt, and a little sugar in a saucepan.
- Set over the fire and bring to a boil, stirring constantly with a wooden spoon until the dough becomes thick and pulls away from the sides.
- Remove from the heat and work in the three eggs and lemon zest, beating the dough vigorously for a good while until well incorporated.
- Using a spoon, drop portions of dough into very hot, abundant oil and fry them.
- These fritters will puff dramatically as they cook—that is the nature of buñuelos de viento (literally "wind fritters").
