Buñuelos de Viento (Puffed Fritters)

Ingredients
- 100 g flour
- 50 g pork lard (manteca de cerdo)
- 1 cup water
- salt
- sugar
- 3 eggs
- lemon zest
- oil for deep frying
Instructions
- Combine the flour, pork lard, water, salt, and a little sugar in a saucepan. Set over the fire and bring to a boil, stirring constantly with a wooden spoon until the dough becomes thick and pulls away from the sides. Remove from the heat and work in the three eggs and lemon zest, beating the dough vigorously for a good while until well incorporated.
- Using a spoon, drop portions of dough into very hot, abundant oil and fry until puffed and golden. These fritters will puff dramatically as they cook—that is the nature of buñuelos de viento (literally "wind fritters").
