Instructions

  1. Peel the apples and place them in a pot with cold water. Cook until very soft. Drain thoroughly and pass through a sieve to create a smooth paste. Add sugar in an equal proportion to the paste, and stir in ground cinnamon. Stir constantly over heat until the mixture reaches its setting point—when it coats the spoon and shows no separation. Transfer to jars while still warm.
