Chicken with Rice

Ingredients
- 1 chicken
- caldo (broth, unskinned of fat)
- a little parsley
- rice
- a little manteca (lard)
Instructions
- Truss and lard the chicken. Place it in a large pot and cover completely with unskinned caldo (broth). Add a little parsley and simmer gently for one hour.
- Strain the caldo and skim off the fat. Once the broth is boiling, add the well-washed rice and simmer over low heat for about thirty minutes.
- The rice should remain firm and separate. Just before serving, stir in a little manteca (lard) and bring to the table.
