Instructions

  1. Rub and halve the apples, then place them in a pot with water and bring to a boil. Pass the cooked apples through a fine sieve (tamiz). Measure the strained apple juice and add an equal quantity of sugar. Over low heat, let the mixture simmer for several hours, stirring occasionally, until it reaches the proper consistency—thick enough to hold its shape on a spoon.
