Mantecados de América (American-Style Shortbread)

Ingredients
- 300 g powdered sugar
- 200 g manteca (lard)
- 6 egg yolks
- 500 g flour, sifted
- a few drops lemon juice
Instructions
- Place the powdered sugar and manteca (lard) on a work surface. Add the egg yolks and work all ingredients together by hand for three minutes until well combined.
- Sift the flour and fold it into the mixture along with the lemon juice drops. Continue working until the dough becomes compact and holds together.
- Using a rolling pin, flatten the dough to your desired thickness. Cut shapes using a round mold or cutter.
- Arrange the shaped dough on baking sheets and bake in a moderate oven until golden.
- Remove from the oven and dust generously with powdered sugar while still warm.
