Mantecados de América (American-Style Shortbread)

Ingredients
- 300 g powdered sugar
- 200 g manteca (lard)
- 6 egg yolks
- 500 g flour, sifted
- lemon juice
Instructions
- Place 300 grams of powdered sugar and 200 grams of manteca (lard) on a work surface.
- Add 6 egg yolks and work all ingredients together by hand for three minutes until well combined.
- Sift 500 grams of flour and fold it into the mixture along with the lemon juice drops.
- Continue working until the dough becomes compact and holds together.
- Using a rolling pin, flatten the dough to your desired thickness.
- Cut shapes using a round mold or cutter.
- Arrange the shaped dough on baking sheets and bake in a moderate oven.
- Remove from the oven and dust generously with sugar while still warm.
