Snow Pudding

Instructions

  1. Dissolve one box of Cox's gelatine in a pint of cold water and let it remain one hour.
  2. Pour a quart of boiling water onto the gelatine.
  3. Beat the whites of ten eggs to a light froth, and add one and one-half teacupfuls of granulated sugar.
  4. When the gelatine has cooled, add one-half teacupful of sugar and the juice of one lemon.
  5. Beat the gelatine into the beaten eggs until light.
  6. Beat the yolks of ten eggs into one teacupful of sugar.
  7. Boil one pint of rich milk and pour it boiling onto the beaten egg yolks, stirring well.
  8. Once the custard cools, add one glass of sherry wine.
  9. Set aside for dessert and serve with sponge cake.
