Snow Pudding

Ingredients
- 1 box Cox's gelatine
- 1 pint cold water
- 1 quart boiling water
- 10 whole eggs, whites only
- 1.5 teacupful granulated sugar
- 0.5 teacupful sugar
- 1 whole lemon
- 10 whole eggs, yolks only
- 1 teacupful sugar
- 1 pint rich milk
- 1 glass sherry wine
Instructions
- Dissolve one box of Cox's gelatine in a pint of cold water and let it remain one hour.
- Pour a quart of boiling water onto the gelatine.
- Beat the whites of ten eggs to a light froth, and add one and one-half teacupfuls of granulated sugar.
- When the gelatine has cooled, add one-half teacupful of sugar and the juice of one lemon.
- Beat the gelatine into the beaten eggs until light.
- Beat the yolks of ten eggs into one teacupful of sugar.
- Boil one pint of rich milk and pour it boiling onto the beaten egg yolks, stirring well.
- Once the custard cools, add one glass of sherry wine.
- Set aside for dessert and serve with sponge cake.
