Jelly Cake

  1. Peel six oranges and grate them.
  2. Pick out the seeds and pith from the grated oranges.
  3. Add one teacup of granulated sugar to the grated oranges and stir well.
  4. Put the mixture on to cook, stirring while it cooks, until done—about twenty minutes.
  5. Set the marmalade aside to cool; it must be made a day before using it for cake.
  6. Cream together one teacup of butter and two teacups of sugar.
  7. Beat the whites and yolks of six eggs separately until very light.
  8. Add the yolks of eggs to the creamed butter and sugar.
  9. Fold in the beaten whites of eggs.
  10. Sift two teaspoonfuls of yeast powder with the flour.
  11. Add the flour mixture to the batter and stir until light.
  12. Pour the batter into pans and bake for fifteen minutes.
  13. While the cake bakes, beat the whites of four eggs very light.
  14. Add three tablespoonfuls of powdered sugar to the beaten eggs and beat together until light.
  15. Spread the icing over the warm cake after it comes from the oven.
  16. Sprinkle one teacup of fine grated coconut over the cake while the icing is soft.
  17. Spread the orange marmalade over the assembled cake.
