Tomato Paste in Bottles or Jars

  1. Boil the tomatoes briefly. Pass them through a fine strainer, pressing well to extract all the pulp. Fill dark glass bottles with this paste, leaving them slightly not quite full. Cap with a cork that has been soaked since the day before. Tie it down firmly with wire and seal with wax. Cook for four hours in a bain-marie (water bath), or longer if using soldered tins.
