Tomatada (Tomato and Egg)

Ingredients
- Ripe tomatoes
- Onions
- Butter
- Pepper
- Salt
- 1 cup Good broth
- 1 cup Raw cream (crema de leche cruda)
- 2 tablespoons Vinegar
- 1 tablespoon Good oil
- 3 to 4 Grilled bread toasts
- Eggs
- Parsley sprigs
Instructions
- Cook together ripe tomatoes and onions, then seed and cut the tomatoes and slice the onions.
- Season in an enameled pan over gentle heat with butter, pepper and salt, stirring ten minutes.
- Pour in a cup of broth and a cup of raw cream; stir, then add two tablespoons vinegar and one of oil.
- Submerge three or four grilled toasts in the sauce and crack eggs over it, about one per person.
- Cover and leave a minute on the fire; serve in the same vessel garnished with parsley sprigs.
