Tomatada (Tomato and Egg)

Ingredients

Instructions

  1. Cook together ripe tomatoes and onions, then seed and cut the tomatoes and slice the onions.
  2. Season in an enameled pan over gentle heat with butter, pepper and salt, stirring ten minutes.
  3. Pour in a cup of broth and a cup of raw cream; stir, then add two tablespoons vinegar and one of oil.
  4. Submerge three or four grilled toasts in the sauce and crack eggs over it, about one per person.
  5. Cover and leave a minute on the fire; serve in the same vessel garnished with parsley sprigs.
