Churros with Eggs

Instructions

  1. Heat the olive oil and milk together in a heavy pot until boiling. Remove from heat and add flour as needed, stirring constantly with a wooden spoon, until the mixture scalds and comes together into a dough. Work the dough without ceasing until smooth.
  2. Allow the dough to cool. Once cooled, incorporate the four eggs into the mass, working it vigorously to combine thoroughly.
  3. Using a churrera (churro mold), pipe the dough into ring shapes (rosca form) directly into very hot fine olive oil in a skillet. Fry until golden and crisp.
  4. Serve as a fine dessert.
