Sweet Omelet

  1. Beat the egg yolks well with the powdered sugar until light and creamy. Fold in the egg whites, beaten to stiff peaks (point of snow). Gently fold in the flour and the well-beaten heavy cream.
  2. Heat manteca de vaca (beef lard) in a skillet over moderate heat. Pour in the batter and cook until the omelet is set but still tender.
  3. Spread the warm omelet with fruit preserves. Roll it up carefully, dust generously with sugar, and place in the oven for a few minutes until lightly glazed.
