Sweet Omelet

Ingredients
- 4 egg yolks
- 50 grams powdered sugar
- 4 egg whites
- 50 grams flour
- 1 glass heavy cream
- manteca de vaca (beef lard)
- fruit preserves
- sugar
Instructions
- Beat the egg yolks well with the powdered sugar until light and creamy.
- Fold in the egg whites, beaten to stiff peaks (point of snow).
- Gently fold in the flour and the well-beaten heavy cream.
- Heat manteca de vaca (beef lard) in a skillet over moderate heat.
- Pour in the batter and cook until the omelet is at its point.
- Spread the warm omelet with fruit preserves.
- Roll it up carefully, dust generously with sugar, and place in the oven for a few minutes until lightly glazed.
