Grilled Beef Short Ribs (Asado de Costillas)

Ingredients
- 1 piece beef rib rack, cut rectangular across the ribs
- broth (caldo), seasoned
- salt
- garlic, ground
- onion, ground
- tomato
- oil
- vinegar
- pepper
- salt
- green ajíes (chili peppers), thinly sliced
Instructions
- Cut a rectangular piece across a rack of beef ribs, to the size needed.
- Wash in cold water, pat dry, then turn it in a plate of seasoned broth with plenty of salt and a little ground garlic and onion.
- Let it drain and lay it on the grill, bone side down, over a very lively fire.
- When the bones have toasted, move the grill onto a second bed of live coals and quickly turn the piece to the meat side.
- Give it about five more minutes of fire until done.
- Serve over a thin tomato sauce seasoned with oil, vinegar, pepper, salt, and thin slices of green ají.
