Grilled Beef Short Ribs (Asado de Costillas)

Instructions

  1. Cut a rectangular piece across a rack of beef ribs, to the size needed.
  2. Wash in cold water, pat dry, then turn it in a plate of seasoned broth with plenty of salt and a little ground garlic and onion.
  3. Let it drain and lay it on the grill, bone side down, over a very lively fire.
  4. When the bones have toasted, move the grill onto a second bed of live coals and quickly turn the piece to the meat side.
  5. Give it about five more minutes of fire until done.
  6. Serve over a thin tomato sauce seasoned with oil, vinegar, pepper, salt, and thin slices of green ají.
