Breaded Veal Cutlets

Ingredients
- veal fillets
- flour
- 1 egg egg
- to taste salt
- a few drops lemon juice
- bread crumbs (finely grated)
- manteca (lard)
Instructions
- Pound the veal fillets well to flatten them evenly. In a shallow bowl, combine flour, beaten egg, salt, and a few drops of lemon juice. Dip each flattened fillet into this mixture, coating both sides. Then roll or press each fillet in finely grated bread crumbs until well coated. Heat the manteca (lard) in a large skillet over moderate heat until it shimmers. Fry the breaded fillets until golden and crisp on both sides, about 3–4 minutes per side depending on thickness. Serve hot.
