Rich Fish Soup
Origin: Madrid, Spain
Source: Anonymous, 1920
Ingredients
- 1 lb fish
- 4 bowls water
- wheat flour
- olive oil
- tomato
- garlic
- onion
- bell pepper (pimiento)
- parsley
- bread
- roasted almonds and hazelnuts sauce
Instructions
- Clean the fish thoroughly. Dredge the fish lightly in flour. Heat olive oil in a large pan until very hot, then fry the fish until golden on both sides. Remove and set aside.
- In the same oil, add the finely chopped tomato, garlic, onion, bell pepper, and parsley. Sauté over gentle heat, stirring occasionally, until the vegetables begin to soften and release their flavors.
- Add the fried fish back to the pan and pour in the water (approximately four bowls for each pound of fish). Add bread as needed to thicken the soup slightly. Stir in the roasted almond and hazelnut sauce, distributing it evenly throughout. Simmer gently until the flavors meld and the soup reaches a rich, unified consistency.
